Here is my latest smoothie incarnation, inspired by one of my favorite places - Hawaii. Since smoothies aren't an exact science, I've included rough measures that can easily be adjusted to taste.
Tropical Fruit Smoothie
1 cup combined fresh mango, papaya, pineapple (rough chop suitable for blending)
1/2 ripe avocado
1/2 cup coconut milk
1/2 cup almond milk
1 tbsp honey
6-8 ice cubes
Place the chopped fruit and avocado in the blender. Pour in enough coconut milk to cover the chopped fruit. Add the ice and honey and blend. Pour the almond milk in through the opening in the lid to thin the smoothie to your taste.
This last step is optional if you like a really thick smoothie. The avocado imparts a rich, velvety texture and once blended, no one will know it's in there.
